Nectarine & Blackberry Sauce

This sauce is super easy, delicious, and versatile. You can use it to top desserts, or mix in batters and creams. Just use your imagination! It's sweet, tangy, fresh, and slightly nutty.

Here's the recipe:


-3 ripe nectarines

-275 g of blackberries

-40 g of unsalted butter

-50 g sugar

-Zest from 1 lemon

-Juice from 1/2 lemon

-A few basil leaves

-A pinch of salt


Dice the nectarines in 1/2 inch dice.

Melt butter in a pan and add sugar. Keep stirring until the sugar and butter turn into a light golden color.

Add the nectarines and cook until soft and jammy. Add a pinch of salt and the blackberries.

Cook until soft, add lemon zest and lemon juice. Cook until thick, add basil, and stop cooking. Once it's slightly cooled, puree then pass the mixture through a fine sieve so all the seeds from the blackberries stay behind. You are looking for a smooth, velvety sauce. Refrigerate the sauce. Once the panna cotta is firm and the sauce is cold, top panna cotta with the sauce, garnish and enjoy! Buon Appetito Amici!
