MEDITERRANEAN PASTA SALAD

Perfect for school lunches, packed with flavor, and protein. Super easy recipe, feel free to add whatever you like to it, and to swap chicken for shrimp, tofu or anything else you prefer.

It's a great basic recipe that can be modified in many ways.

INGREDIENTS FOR 5 LUNCHES

-250 g farfalle

-3/4 cup of pesto

-3/4 cup diced red bell pepper

-3/4 cup diced red onion

-1/4 cup sliced Kalamata olives

-1/4 cup toasted pine nuts

-1/2 cup shredded carrot

-1.5 cups crumbled feta

-2 cups grilled, seasoned chicken breast


METHOD

Cook pasta and toss with the rest of the ingredients.

Once cooled, store in airtight container for up to 5 days (unless you use fish). You can omit the protein and add it on the day of, as well as other veggies like, tomatoes and cucumbers.
