Italian Sausage and Chicken One Pan Meal

I love one pan meals, especially on days I work all day! I love that I work in a kitchen and can actually make dinner while I'm at work! ๐Ÿ™Œ

Tonight's dinner was Italian sausage, chicken breast and veggies roasted in one pan, served with, crispy Parmigiano potato wedges.


INGREDIENTS FOR 6

๐Ÿฅ˜3 medium/large chicken breasts cut in half

๐Ÿฅ˜5 Italian sausages cut in half

๐Ÿฅ˜1 lbs brussel sprouts cut in half

๐Ÿฅ˜1 large red pepper cut in strips

๐Ÿฅ˜1 lbs cremini mushrooms cut in quarters

๐Ÿฅ˜1 red onion cut in thick slices

๐Ÿฅ˜1 cup cherry or grape tomatoes cut in half

๐Ÿฅ˜1/4 cup EVOO

๐Ÿฅ˜1 cup white wine

๐Ÿฅ˜2 tsp garlic granules

๐Ÿฅ˜2 tsp smoked paprika

๐Ÿฅ˜2 tsp oregano

๐Ÿฅ˜1 tsp salt


METHOD

Add all ingredients to a large pan and toss with your hands making sure all veggies and meat are coated with the oil and spices. Roast at 400F for 30 minutes or until thermometer inserted in the thickest part of the chicken reads 160F.


INGREDIENTS FOR PARMIGIANO POTATOES

๐Ÿฅ”1 Kg waxy potatoes cut in wedges

๐Ÿฅ”1/4 cup EVOO

๐Ÿฅ”1/4 cup Parmigiano Reggiano

๐Ÿฅ”2 tsp seasoning salt

๐Ÿฅ”1 tsp garlic granules

๐Ÿฅ”1 tbsp dry parlsey


METHOD

Add all ingredients in a bowl, toss with your hands making sure all potatoes are evenly coated with cheese/oil/spice mixture.

Roast at 400F for 20-30 minutes depending in the thickens of the potatoe wedges.

Serve with a salad and enjoy!
