Butter Lettuce, Apple & Gorgonzola Salad with Dijon Dressing


INGREDIENTS for 4

-2 heads of butter lettuce

-1 thinly sliced Gala apple

-1 small, thinly sliced shallot

-1/4 cup gorgonzola

-1/2 cup coarsely chopped assorted nuts (walnuts, pecans, toasted almonds, pistachio)

Dressing

-1/4 cup (60ml) EVOO

-1 Tbs dijon mustard

-2 Tbs sherry vinegar

-2 tsp agave syrup or honey

-1/2 tsp salt


METHOD

Arrange the lettuce and apple slices on a platter. Sprinkle shallot all over, top with gorgonzola and nuts, and drizzle with the dressing.

Get ready to eat the whole thing! It is INCREDIBLE!!
